Our creamy paprika pasta is a delicious, light & vegan recipe for a warm summer evening at home in the garden or on the terrace! 🙂

Ingredients
- 1 Onion
- 4 chopped garlic cloves
- 1 red pepper
- 250 g Cherry tomatoes
- 1 TL Wacker date sugar organic
- 50 g soaked cashew nuts
- Juice a Lemon
- 100 ml Oat milk
- 100 ml Pasta water
- approx. 2.5 Hands full fresh basil
- A few Wacker Cedar Nuts Organic
- Mediterranean spices
- Salt & Pepper
Instructions
- Cut the vegetables for the sauce.
- Put the olive oil in a pan with the onion, garlic, cherry tomatoes, peppers, a handful of basil and the Mediterranean spice. After a while, add the date sugar. Sauté the vegetables until the tomatoes are soft enough to mash.Â
- Cook the pasta in the meantime.
- Put the vegetables from the pan into a blender together with the cashews, the pasta water, the oat milk, the lemon juice, the other handful of basil and salt + pepper and puree all the ingredients to a fine sauce.
- Pour the sauce over the warm pasta and top with chopped cedar nuts, some more Wacker Mediterranean seasoning and a few basil leaves.🌿 Enjoooooooy
