Pasta salad with carrots & cucumber

This vegan pasta salad not only looks super pretty with its many bright colours, but also tastes really delicious!

Pasta salad with carrots & cucumber

Servings: 1 Portion

Ingredients

  • 100 g Wacker Sprouted Pasta Fusilli
  • 1 Carrot
  • 1 Cucumber
  • 1 red pepper
  • 1 Lemon
  • 3 Vine tomatoes
  • 2 Bars Spring onions
  • 1 Pinch Herbal salt
  • something Pepper
  • 2 EL Olive oil
  • fresh sprouts optional

Instructions

  • Cook the pasta according to the instructions on the packet.
  • In the meantime, peel the carrots and cucumber. Grate the carrots and cut the cucumber into small cubes. Also dice the peppers and tomatoes and cut the spring onions into fine rings.
  • Put everything in a bowl, add lemon, olive oil and spices, mix and season to taste. Optionally, top with sprouts & enjoy 🙂 .
