So delicious: our vegan & gluten-free vegetable curry with sprouted chickpeas that will keep you full for a long time 🙂

Ingredients
- 100 g Wacker sprouted chickpeas in a jar organic
- 2 Carrots
- 1 red pepper
- 3 Potatoes
- 2 Bars Spring onions
- 1/2 Mango
- 100 ml Wacker Vegetable Mix Organic
- 100 ml Coconut milk
- 2 red onions
- 1 EL Curry (paste or spice mixture)
- 1 TL Herbal salt
- 1 EL Olive oil
- 2 EL Wacker Cedar Nuts Organic
Instructions
- Boil the chickpeas with plenty of water for about 25 minutes until soft, then drain the water.
- In the meantime, cut the vegetables into bite-sized pieces. Cut the red onion into strips and sauté in a large pot with the olive oil until slightly translucent. Then lightly fry the cut vegetables and the chickpeas with the curry powder or curry paste in the pot.
- Pour in the vegetable mix and coconut milk, season with herb salt and season to taste. Now let everything simmer for 20 minutes.
- Peel the mango, cut into bite-sized pieces, wash and slice the spring onions and add both just before serving. Top with the cedar nuts and enjoy 🙂
