Cut the peppers and courgettes into small pieces and fry in a pan with a little oil & spices.
Wash the baby spinach, halve the tomatoes and toast the bread in a toaster or in a pan until crispy.
Spread the avocado on one slice of bread and top with the lime juice, tomato slices and coriander. Spread some Toscana cream on the other slice of bread and top with the sautéed vegetables and baby spinach.
Cut the sandwich in half and enjoy! :-)
