First put the water and rice in a pot with a pinch of salt. Bring the rice to the boil and then let it simmer on a low flame until it is cooked.
Meanwhile, chop the onions, garlic and coriander.
First steam the onions for a while in a pan with the spices, some fresh coriander and the lentils. Then add the garlic.
Then you can add the can of tomatoes and let everything cook together. If the mixture is too thick, add a little more water. When the lentils are almost done, pour the coconut milk into the pan and add the spinach. Wait until the lentils are completely cooked.
At the end, season the dal with date sugar, lemon juice and salt & pepper and add the fresh coriander and coconut yoghurt. ENJOY! :)
