One of our favourite vegan recipes for the colder seasons is a warming lentil dal. It is easy to prepare and the different spices, fruity tomatoes and creamy coconut milk make the dal a taste sensation 🙂
Servings: 3
Ingredients
- 1 Cup Wacker Sprouted Rice Organic
- 2 Cups Water
- 1 Can Tomatoes
- 1 Can Coconut milk
- 250 g Wacker Sprouted Lentils Organic
- 1 Onion
- 3 Garlic cloves
- 1 TL Ginger
- 1 TL Turmeric
- 1 TL Cumin
- 1 TL Paprika
- 1 TL Cinnamon
- something Salt To taste
- something Pepper To taste
- 150 g Spinach fresh
- 2 handful Coriander fresh
- Juice 1/2 Lemon
- 2 TL Wacker date sugar organic
- 3 EL Coconut yoghurt
Instructions
- First put the water and rice in a pot with a pinch of salt. Bring the rice to the boil and then let it simmer on a low flame until it is cooked.
- Meanwhile, chop the onions, garlic and coriander.
- First steam the onions for a while in a pan with the spices, some fresh coriander and the lentils. Then add the garlic.
- Then you can add the can of tomatoes and let everything cook together. If the mixture is too thick, add a little more water. When the lentils are almost done, pour the coconut milk into the pan and add the spinach. Wait until the lentils are completely cooked.
- At the end you can season the dal with date sugar, lemon juice and salt & pepper and add the fresh coriander and coconut yoghurt. ENJOY! 🙂

I wanted to ask you whether your sprouted organic rice should also be rinsed several times before cooking and soaked for two hours beforehand.

You are welcome to rinse the rice several times before cooking, but you don't have to. This is because the rice grain has already been soaked in water and then rinsed regularly with water,
until a small sprout grows from it. Soaking is also not necessary.
