Instructions
Preheat the oven to 200°C top/bottom heat.
Peel and finely dice the sweet potato and the onion.
Spread the chickpeas, sweet potato and onion on a baking tray.
Marinate with a little oil and seasoning and place in the oven for 25-30 minutes.
In the meantime, wash the spinach and mix the ingredients for the dressing in a jar.
When the sweet potato is cooked and the chickpeas are crunchy, prepare the dish.
Mix the vegetables with the spinach and dressing and arrange on plates. Finally, top with chickpeas and enjoy.
