Crunchy sweet potato salad with spinach

Ingredients

Dressing

  • 3 TL Hummus
  • 2 EL Olive oil
  • 2 EL Juice of one lime
  • something Garden herbs

Instructions

  • Preheat the oven to 200°C top/bottom heat.
  • Peel and finely dice the sweet potato and the onion.
  • Spread the chickpeas, sweet potato and onion on a baking tray.
  • Marinate with a little oil and seasoning and place in the oven for 25-30 minutes.
  • In the meantime, wash the spinach and mix the ingredients for the dressing in a jar.
  • When the sweet potato is cooked and the chickpeas are crunchy, prepare the dish.
  • Mix the vegetables with the spinach and dressing and arrange on plates. Finally, top with chickpeas and enjoy.
