Ingredients
- 1 Sweet potato
- 1 Onion
- 150 g Baby spinach
- 100 g Wacker sprouted chickpeas in a jar organic
- 1 EL Olive oil
- something Herbal salt
- something Mediterranean spices
Dressing
- 3 TL Hummus
- 2 EL Olive oil
- 2 EL Juice of one lime
- something Garden herbs
Instructions
- Preheat the oven to 200°C top/bottom heat.
- Peel and finely dice the sweet potato and the onion.
- Spread the chickpeas, sweet potato and onion on a baking tray.
- Marinate with a little oil and seasoning and place in the oven for 25-30 minutes.
- In the meantime, wash the spinach and mix the ingredients for the dressing in a jar.
- When the sweet potato is cooked and the chickpeas are crunchy, prepare the dish.
- Mix the vegetables with the spinach and dressing and arrange on plates. Finally, top with chickpeas and enjoy.
