In a bowl, mix the oatmeal flour, tigernut flakes, melted coconut oil and date sugar until you have an even mixture. Press the mixture into a mould lined with baking paper and leave to set in the freezer.
Mix the peanut butter, date sugar and coconut oil in a bowl until you have a creamy caramel mixture. Spread this evenly over the base and leave to set again in the freezer.
Melt the chopped chocolate over a bain-marie, then stir in the peanut butter. Pour the mixture over the caramel layer and sprinkle with a pinch of salt.
Chill the Twix bars in the fridge for at least 2 hours until they are firm. Then cut into pieces and enjoy!
