Autumn is here and so is our autumnal pumpkin porridge! 🙂 Because immediately the need to use seasonal pumpkin in as many meals as possible is there. Do you love pumpkin as much as we do? Then this vegan recipe might be for you!
Ingredients
- 40 g Wacker Sprouted Oat Flakes Organic
- 150 ml Oat milk
- 100 ml Water
- 2 EL Wacker date sugar organic
- 1 TL Vanilla
- 3 TL Cinnamon
- 1/2 TL Nutmeg
- 1/2 TL Ginger
- 60 g Pumpkin puree (homemade)
- 1 Pinch Salt
- 3 EL Coconut yoghurt
- 1 handful Pecans
- 1 EL Pumpkin seeds
- 1/2 Plum
- 1 handful Blackberries
Instructions
- First prepare the pumpkin puree. Remove the skin from the pumpkin, cut it into small cubes and put it in a pot with enough water to just cover the pumpkin. Let it simmer until it is cooked and then blend it into a delicious puree.
- Next, put the oats, milk, water, sugar and all the spices in a pot. Let the porridge simmer for about 15 minutes until it has a creamy consistency.
- Add the pumpkin puree and if you like it more liquid, you can pour in some more oat milk.
- Now you can decorate the finished porridge with the coconut yoghurt, the plum pieces, the blackberries, the pumpkin seeds and the pecans. Enjoy your meal 🙂
