  • Boil the chickpeas with plenty of water for about 25 minutes until soft, then drain the water.
  • In the meantime, cut the vegetables into bite-sized pieces. Cut the red onion into strips and sauté in a large pot with the olive oil until slightly translucent. Then lightly fry the cut vegetables and the chickpeas with the curry powder or curry paste in the pot.
  • Pour in the vegetable mix and coconut milk, season with herb salt and season to taste. Now let everything simmer for 20 minutes.
  • Peel the mango, cut into bite-sized pieces, wash and slice the spring onions and add both just before serving. Top with the cedar nuts and enjoy 🙂
