Angel Eyes with Apple-Mango Filling

Cook Time: 25 minutes

Instructions

  • Preheat the oven to 160 degrees top/bottom heat.
  • For the dough, put all the ingredients in a bowl and knead into a dough. Chill briefly in the refrigerator.
  • Then quickly form large balls. Use a wooden spoon to press depressions into the balls.
  • For the filling, boil the apple-mango sauce with a little cornflour or agar-agar until it thickens, then pour into the depressed cavities.
  • Bake the biscuits for 15 minutes and then leave to cool.

    Great recipe!
    At first I was afraid that the biscuits would be very dry. What can I say: I was pleasantly surprised.
    Quick to make and totally delicious... tender and short... and healthy too ;-). However, I used a homemade sugar-reduced gooseberry-blackcurrant jam from my mother for the filling. The tartness of the jam goes perfectly with the sweet and nutty biscuits. Thank you for the lovely recipe 🙂
